Storytellers Café at Disneyland is well known for this often-requested recipe. I’ve heard guests can watch Disney chefs making this exact salad in the restaurant’s exhibition kitchen. Not only is this salad deliciously sweet and salty, it’s easy to make!
The recipe that follows is taken from the cookbook ‘Cooking with Mickey and the Disney Chefs.’
4 cups mixed baby greens
24 pecan halves
1 Bosc pear – *Cooks note: Sweet-tart Bosc pears, with a slender neck and yellow skin with russeting, are in season October through April.
1/2 to 2/3 cup Honey Balsamic Vinaigrette (below)
1/4 cup crumbled blue cheese
1. Mix baby greens and pecan halves in a small bowl.
2. Cut Bosc pear in half. Remove seeds and slice thinly, leaving skin on. Add 3/4 of pear slices to salad.
3. Gently toss with Honey Balsamic Vinaigrette. Place additional pear slices around the salad and top with blue cheese.
Honey Balsamic Vinaigrette
3 tbsp. honey
3 tbsp. balsamic vinaigrette
6 tbsp. olive oil
1 garlic clove, minced
1 tsp minced shallot
1/8 tsp salt
Freshly ground black pepper to taste.
In a small bowl, combine honey, vinaigrette, olive oil, garlic and shallot. Mix, using whisk, and salt to taste. Toss with salad greens and add pepper to taste.
